# How to Make a Barbie Cake at Home
A Barbie cake is one of the most magical birthday cakes a kid can receive — and one of the most satisfying to bake. The finished result looks impressive, but the process is genuinely achievable at home, even for beginner bakers. The secret is the right tin and a bit of patience with the decoration.
This guide walks you through everything: what you need, how to bake the dome cake, and how to decorate the skirt in a few different styles.

## What You Need to Make a Barbie Cake
### The Tin
You'll need a [Dolly Varden cake tin](/collections/dolly-varden) — a cone-shaped pan that bakes the dress skirt in a single bake. We stock the Mondo Dolly Varden in two sizes:
- **Mini (13.5cm base, 12.5cm tall)** — best for smaller dolls or a miniature Barbie cake
- **Standard (18cm base, 15cm tall)** — the right fit for a full-size Barbie doll
For a classic Barbie birthday cake, go with the standard size.
### The Doll (or Doll Pick)
You have two options:
- **A real Barbie doll** — remove the legs before inserting into the cake, or wrap the legs in cling film before inserting the doll after baking
- **A doll pick** — the upper half of a doll on a food-safe stick, specifically designed for Dolly Varden cakes. No carving required, no hygiene worries. Search "doll pick" in our store
### The Cake Batter
Not all batters work well in a deep cone tin. You want something dense and sturdy:
- **Mud cake** (chocolate or vanilla) — the ideal choice. Dense, moist, and holds its shape perfectly
- **Butter cake** — a firm, classic vanilla butter cake also works well
- **Avoid**: light sponges or chiffon cakes — they can collapse inside the deep cone shape
A standard 18cm Dolly Varden tin holds approximately 6–8 cups of batter (equivalent to an 8-inch round cake recipe).
### Decoration Supplies
Depending on your chosen finish, you'll need some combination of:
- [Buttercream icing](/collections/buttercream-icing) for piped rosettes, ruffles, or swirls
- [Fondant](/collections/icing-fondant) for a smooth, elegant skirt
- [Piping bags](/collections/piping-bags) and [piping tips](/collections/piping-tips) — a 1M or 2D tip is perfect for rosette detail
- [Edible sprinkles](/collections/edible-sprinkles) or [sanding sugar](/collections/sanding-sugar) pressed into the fresh buttercream
- [Edible glitter](/collections/edible-glitter) or [lustre dust](/collections/lustre-dust) for a finishing shimmer
- [Edible flowers](/collections/edible-flowers) for a romantic, floral style

## Step-by-Step: How to Bake a Barbie Cake
### Step 1 — Prepare the Tin
Grease the Dolly Varden tin thoroughly with butter or cooking spray, then dust with flour or line the base with a circle of baking paper. The cone shape can make cake release tricky if the tin isn't properly prepared — don't skip this step.
### Step 2 — Make Your Batter
Mix your cake batter of choice. For a classic Barbie cake, a vanilla mudcake or butter cake works beautifully. You want a batter thick enough to hold its structure through a long bake.
### Step 3 — Fill and Bake
Fill the tin to about 80% capacity to allow room for rise. Bake at a lower temperature than a standard round cake — around 150°C to 160°C fan-forced — for longer. The cone shape insulates the centre, so the outside can brown before the middle is cooked through.
Cover the top loosely with foil halfway through baking if it's browning too quickly. A skewer inserted in the centre should come out clean when it's done.
Baking time varies by size and oven, but expect 70–90 minutes for a standard Dolly Varden.
### Step 4 — Cool Completely
Let the cake cool in the tin for 20 minutes before turning out. Then cool completely on a wire rack — at least 2 hours — before you attempt to carve or decorate. A warm cake will crumb badly and won't hold decoration.
### Step 5 — Insert the Doll or Doll Pick
If using a real doll, carve a small cone-shaped hollow from the top centre of the cake to fit the doll's legs. Wrap the doll's legs in cling film before inserting for hygiene.
If using a doll pick, simply press it into the centre of the cake top — no carving needed.
### Step 6 — Crumb Coat
Before the final decoration, apply a thin crumb coat of buttercream all over the skirt surface. This seals in crumbs and gives the final layer of icing something to grip. Chill in the fridge for 20–30 minutes to set.
### Step 7 — Decorate the Skirt
Now the fun part. Choose your style and go to town.

## Barbie Cake Decoration Ideas
### Classic Piped Rosettes
The most popular finish. Using a 1M or 2D star tip and pink or lilac buttercream, pipe overlapping rosettes starting from the base of the skirt and working upward. Cover every visible part of the cake. Add a sprinkle of [edible glitter](/collections/edible-glitter) on top for magic.
### Fondant Skirt
Roll out a sheet of [fondant](/collections/icing-fondant) and drape it over the crumb-coated cake, smoothing gently. Trim at the base and use a veining tool or comb to add texture or pleats. Finish with a fondant bow or ribbon around the waist.
### Ombre Tiered Swirls
Tint your buttercream in three or four shades — from deep magenta at the base through to pale blush at the top. Pipe each shade in horizontal tiers using a star tip. The graduated colour effect looks gorgeous and is easy to do.
### Sprinkle Cascade
Pipe a layer of plain buttercream all over the skirt, then immediately press handfuls of [rainbow sprinkles](/collections/sprinkle-blends) or [sanding sugar](/collections/sanding-sugar) into the surface. This is the easiest finish and kids absolutely love it.
### Edible Flower Garden
Pipe a base coat of white or pale green buttercream, then press [edible flowers](/collections/edible-flowers) all over the skirt for a romantic, garden party look. Perfect for a fairy tale or boho Barbie theme.

## Common Barbie Cake Questions
**Can I make a Barbie cake without a Dolly Varden tin?**
You can stack and carve round layers to create a similar shape, but it's time-consuming and harder to get a smooth cone. A dedicated [Dolly Varden tin](/collections/dolly-varden) gives a cleaner result with less effort.
**How far in advance can I make a Barbie cake?**
You can bake the cake 1–2 days ahead and store it wrapped at room temperature. Decorate the day before or the day of the party. Once decorated, store in a cool place out of direct sunlight — not in the fridge if it's fully buttercreamed, as condensation can affect the finish.
**What size board do I need for a Dolly Varden cake?**
A standard 18cm Dolly Varden looks best on a 25cm (10-inch) round [cake board](/collections/cake-boards). This gives you enough border to add a decorative edge or ribbon.
**Can I use a box cake mix for a Barbie cake?**
Yes — a packet mud cake or butter cake mix is absolutely fine. Just make sure the batter is on the denser side (avoid box mixes designed for light, fluffy sponges).
