Ready-to-Use Cake Fillings

A great cake filling is what separates a cake that looks impressive from one that actually tastes as good as it looks. Every filling in our range is designed to be pipeable or spreadable directly from the container — consistent in texture, stable enough to hold between layers, and strong enough to support the tier above without soaking into the sponge. Pair with our cake mixes for a complete bake-and-fill setup, or premade buttercream to finish the outside.

Types of Cake Fillings

Ganache Cake Filling

Ready-made ganache is one of the most versatile cake fillings available — smooth, stable, and equally effective as a filling between layers, a masking coat, or a drip finish. Our range covers four ganache styles:

  • Milk Chocolate Ganache (500g and 1kg) — a smooth, rich chocolate ganache that's ready to spread at room temperature. Use between sponge layers, as a masking coat beneath fondant, or as a drip on a naked cake. The 1kg size is ideal when you need filling and masking in one product.
  • White Chocolate Ganache (750g, Cakers Masking Cake Craft) — a neutral, creamy base that pairs well with fruit fillings and coloured fondant finishes.
  • Dark Chocolate Ganache (750g, Cakers Masking Cake Craft) — deeper, more intense chocolate flavour for a richer finish between layers.
  • Raspberry Ganache (750g, Cakers Masking Cake Craft) — a fruit-forward ganache that works beautifully inside chocolate mud and white chocolate cakes. One of the most popular cake filling flavours for celebration cakes.
  • Caramel Ganache (750g, Cakers Masking Cake Craft) — a firmer, ganache-style caramel that sets more solidly than a traditional caramel filling, making it ideal for masking and filling cakes that will be covered in fondant.

Caramel Cake Filling

We stock two caramel options to suit different applications:

  • Premium Caramel Filling (500g) — a thick, pipeable caramel designed specifically for layer cakes and filled cupcakes. Rich, smooth, and stable enough to hold between sponge layers without running. Pipe it between tiers or fill cupcake centres for a crowd-pleasing result.
  • Salty Caramel Sauce (500g) — a more fluid caramel better suited for drizzling between layers where a soak-through effect is desired, or served warm alongside cake slices. Not recommended as a standalone structural filling.

Biscoff Cake Filling

Our Biscoff Filling (500g) is one of the most in-demand cake filling ideas right now — a smooth, creamy spread made from caramelised Biscoff biscuits in a pipeable filling format. It layers beautifully inside vanilla sponge, chocolate mud, and carrot cakes. Also works as a cupcake filling piped into the centre before frosting. Easy to use, intensely flavoured, and a reliable crowd-pleaser at any celebration.

Hazelnut & Pistachio Fillings

Two premium specialty fillings for bakers looking to elevate their flavour profiles:

  • White Hazelnut Spread Filling (500g, Iconic Cake Art) — a smooth white hazelnut filling with a clean, nutty flavour that layers well inside vanilla, chocolate, and hazelnut cakes. Also available in a 1kg bulk size for professional kitchens.
  • Pistachio Spread (1kg bulk, Iconic Cake Art) — a luxurious pistachio filling that's one of the fastest-growing cake flavour trends in Australia. Pairs particularly well with vanilla sponge, white chocolate ganache, and fresh cream cakes. Sold in 1kg — ideal for professionals working at volume.

Buttercream as a Cake Filling

Buttercream is the most widely used cake filling in Australia — versatile, reliable, and available in a wide range of flavours and colours straight from the tub. Our range of ready-made buttercream fillings includes:

  • Colour Mill Gloss Frost Buttercream (1L and 2L) — a premium, glossy-finish buttercream ideal for filling and frosting. Available in white and red.
  • Over The Top Buttercream (425g and 1.7kg) — a trusted Australian-made buttercream in white and chocolate. Smooth, pipeable, and consistent across every tub.
  • Sprinks Buttercream (425g, pre-coloured range) — available in white, pink, blue, green, red, and black. Pre-coloured and ready to use as a filling or frosting without any additional colouring.
  • Cake Cream Buttercream (400g and 800g) — available in a range of pre-mixed colours including Whisper White, Midnight Black, Vivid Red, Bubble Pink, Purple Rain, and Chocolate, plus vanilla and salted caramel flavours. Pipe between layers or use to frost and finish the outside.
  • Country White Cake Craft Buttercream (845g) — a classic white base at a mid-volume size, well suited for filling and crumb-coating.

For the full buttercream range including bulk tub sizes, see our dedicated premade buttercream icing page.

Cupcake Fillings

Most of our fillings work equally well as cupcake fillings — simply core the cupcake with a knife or apple corer, pipe or spoon in the filling, then frost over the top. The best options for cupcake centres are the Biscoff Filling (smooth and intensely flavoured), Premium Caramel Filling (thick enough not to run), and Milk Chocolate Ganache (rich and stable). For piping into cupcake centres, the Loyal Filling Piping Tube makes the job much neater — a long, narrow tip designed specifically for injecting filling directly into the centre of a cupcake without coring.

Lemon Cream & Fruit Fillings

For lighter, fruit-forward cake filling ideas, our Lemon Cream (500g) is a bright, tangy lemon curd-style filling that cuts through rich or sweet cakes beautifully. It pairs particularly well with almond, vanilla sponge, and poppy seed cakes, and works as both a filling between layers and a topping. Our Maraschino Cherries (225g, Sandhurst) add the classic fruity layer to Black Forest cakes and cherry-layered desserts.

How Much Cake Filling Do I Need?

For a standard two-layer 8" round cake with one filling layer, plan on 200–300g of filling depending on how generously you spread. For a three-layer cake with two filling layers, allow 400–500g. Our 500g filling sizes suit a single cake comfortably. The 1kg Milk Chocolate Ganache is the best value option when you need filling and a masking coat from the same product. For cupcake fillings, a 500g jar will fill 20–24 cupcake centres.

FAQs — Cake Fillings

What is the best cake filling for a layered cake?

The best filling depends on your cake flavour and structure. For tiered or fondant-covered cakes, ganache (chocolate or caramel) and thick buttercream are the most stable choices — they hold their shape under weight. For celebration cakes eaten fresh, Biscoff filling, caramel, and hazelnut spread are all popular crowd-pleasers. For fruit-forward cakes, our lemon cream or raspberry ganache pairs particularly well.

What are the most popular cake filling ideas in Australia?

Currently the most requested filling flavours are: Biscoff, salted caramel, milk chocolate ganache, raspberry ganache, pistachio, and lemon cream. Vanilla and chocolate buttercream remain the most widely used all-round choices.

Can cake fillings be used as cupcake fillings too?

Yes — most of our fillings work equally well as cupcake fillings. Core the cupcake, pipe or spoon in the filling, then frost over the top. The Loyal Filling Piping Tube is designed specifically for injecting filling into cupcake centres without coring, which saves significant time when working in volume.

What's the difference between a caramel filling and caramel sauce?

A caramel cake filling is thicker and more stable — designed to hold between layers without running or soaking into the sponge. A caramel sauce is thinner and better suited for drizzling over the top of a cake or serving alongside slices. We stock both: Premium Caramel Filling for internal layers and Salty Caramel Sauce for drizzling and serving.

How should cake fillings be stored after opening?

Most fillings should be stored in a cool, dry place before opening and refrigerated once opened. Ganache-based fillings will firm up in the fridge and need to be brought to room temperature before spreading. Caramel and fruit-based fillings should be used within a few days of opening. Always check the individual product label for specific storage guidance.

Can I use ganache as both a filling and a masking coat?

Yes — this is one of the main advantages of ganache over other fillings. Our Milk Chocolate Ganache (1kg) is specifically sized for bakers who want to fill the layers and mask the exterior of a cake from the one product. Apply between layers first, allow to firm slightly, then use the remaining ganache at a slightly thinner consistency to mask the outside before applying fondant or a final buttercream coat.

Are any cake fillings gluten-free?

Several of our fillings are suitable for gluten-free use, but always check the individual product listing for full allergen information. Biscoff products do contain wheat. For gluten-free baking ingredients across the full range, browse our gluten-free baking collection.
