Ingredients & Substitutions

1. What is the difference between Dutch-processed and natural cocoa powder?

Natural cocoa is acidic and reacts with baking soda. Dutch-processed is neutralized and won't react with soda, so it’s usually paired with baking powder. They aren't always interchangeable!

2. Can I use salted butter if the recipe calls for unsalted?

Yes, but reduce the added salt in the recipe by about $1/4$ teaspoon per half-cup of butter used.

3. How do I make a DIY buttermilk substitute?

Add 1 tablespoon of lemon juice or white vinegar to 1 cup of regular milk and let it sit for 5–10 minutes until it curdles slightly.

4. What does "room temperature" actually mean for butter?

It should be cool to the touch (around 18°C–20°C) and hold an indent when pressed, but not be greasy or melty.

5. Can I swap honey for granulated sugar?

Honey is sweeter and adds moisture. Use $3/4$ cup of honey for every 1 cup of sugar, and reduce the other liquids in the recipe by 2 tablespoons.

6. What is the difference between active dry yeast and instant yeast?

Active dry needs to be "bloomed" in warm water first. Instant yeast can be mixed directly into dry ingredients.

7. Why is my vanilla extract clear vs. brown?

Clear vanilla is usually synthetic (imitation) and is used to keep white frostings perfectly white. Brown vanilla is typically pure extract.

8. Can I use bread flour instead of all-purpose?

Bread flour has more protein/gluten, which makes things chewier. It’s great for bread but might make a cake too tough.

9. How do I make my own cake flour?

Measure 1 cup of all-purpose flour, remove 2 tablespoons, and replace them with 2 tablespoons of cornstarch. Sift well.

10. What are "oil-based" food colors used for?

Standard gels are water-based and will cause chocolate to seize. You must use oil-based colors (like Colour Mill) for chocolate and candy melts.

Science & Troubleshooting

11. Why did my cake sink in the middle?

Common culprits: underbaking, opening the oven door too early (causing a temp drop), or using too much leavening agent (baking powder/soda).

12. Why are my cookies spreading too much?

Usually, the butter was too soft or the dough wasn't chilled. Try chilling your dough for at least 30 minutes before baking.

13. Why is my buttercream grainy?

The powdered sugar might need sifting, or the butter and sugar weren't creamed long enough.

14. How do I fix a split or curdled ganache?

Gently warm a small amount of milk or cream and slowly whisk it into the broken ganache to bring the emulsion back together.

15. Why do my cupcakes peel away from the liners?

This often happens due to moisture buildup. Take them out of the metal tin immediately after baking to cool on a wire rack.

16. Why is my cake dry?

Overbaking is the #1 cause. Another is over-mixing the batter, which creates too much gluten and a tough, dry crumb.

17. How do I prevent a large dome on my cake?

Lower the oven temperature slightly and use "cake strips" (wet fabric bands) around the outside of the pan for an even rise.

18. Why did my macarons crack?

Usually caused by too much moisture in the batter or not letting the shells "skin over" (dry) long enough before putting them in the oven.

19. Why is my bread so dense?

The yeast might be dead, the water was too hot (killing the yeast), or the dough wasn't kneaded enough to develop gluten.

20. My frosting is too runny! How do I thicken it?

Add more sifted powdered sugar one tablespoon at a time, or chill it for 20 minutes if the butter has become too soft.

Decorating & Finishing

21. What is the difference between American and Swiss Meringue Buttercream?

American is very sweet and "crusts" over. Swiss Meringue is cooked, contains egg whites, and is much silkier and less sweet.

22. How do I get perfectly sharp edges on my fondant?

The secret is the "two-smoother" method and ensuring your underlying ganache or buttercream is chilled rock-hard first.

23. What is a "crumb coat" and is it necessary?

A thin layer of frosting that seals in crumbs. It is essential for a professional, clean finish on the final layer.

24. How do I get a deep black or red frosting?

Start with a chocolate base for black, or use concentrated gels. Let the color "mature" (sit) for a few hours; it will darken over time.

25. Can I use fresh flowers on a cake?

Only if they are non-toxic/edible and pesticide-free. Always wrap the stems in floral tape or use "flower spikes" to prevent contact with the cake.

26. How do I make a chocolate drip?

Use a 1:1 ratio of chocolate to heavy cream. Ensure the cake is very cold and the drip is slightly warm but not hot.

27. What is the best way to use a cake stencil?

Pin it tight against a chilled cake and use a very stiff icing. Swipe once and peel away carefully.

28. Is luster dust edible?

Look for labels that say "Edible" or "Food Grade." Some are labeled "Non-toxic," which means they are for decoration only and should be removed before eating.

29. How do I stop my cake from sliding on the board?

Put a small "dab" of buttercream or glucose syrup on the board before placing the first cake layer down.

30. How do I use edible gold leaf without it sticking to my fingers?

Use a pair of anti-static tweezers or a dry, soft brush. Avoid touching it with your hands—it reacts to the oils on your skin!

Equipment & Tools

31. Should I use the "Fan-Forced" or "Conventional" oven setting?

Most recipes use Conventional. If using Fan-Forced, reduce the suggested temperature by 20°C to avoid drying out the bake.

32. Is a silicone mat better than parchment paper?

Silicone is great for macarons and cookies as it’s reusable and non-stick. Parchment is better for cakes as it can be cut to fit any pan.

33. Why do I need a wire cooling rack?

It allows air to circulate under the bake, preventing steam from making the bottom of your cake or cookies soggy.

34. Glass vs. Metal mixing bowls—does it matter?

Metal is better for whisking egg whites (glass can retain oily residue). Glass is great for seeing if ingredients are fully incorporated at the bottom.

35. Do I really need to sift my flour?

For sponges and delicate cakes, yes! It aerates the flour and removes lumps, leading to a much lighter texture.

36. Why should I weigh ingredients in grams instead of using cups?

A cup of flour can vary by 20–30 grams depending on how it’s packed. Scales provide the precision needed for consistent results.

37. How do I clean grease off my silicone molds?

Soak them in very hot water with a de-greasing dish soap. Avoid abrasive sponges which can damage the non-stick surface.

38. What is a "coupler" used for in piping?

It allows you to change piping tips on the same bag of frosting without having to empty it into a new bag.

39. Can I put my piping tips in the dishwasher?

It's better to hand-wash them with a small tip brush to ensure no sugar or fat is left inside, which can cause rust or clogs.

40. What size cake board should I use?

Generally, choose a board 2 inches (5cm) larger than the cake itself to leave room for frosting and borders.

Storage & Prep

41. Can I freeze a fully decorated cake?

Yes, if it's buttercream. Chill it until hard, wrap it in several layers of plastic wrap, then foil. Thaw in the fridge overnight.

42. How long do cupcakes stay fresh?

Unfrosted: 2 days at room temp (airtight). Frosted: 3-4 days in the fridge. Always bring to room temp before serving!

43. How do I store macarons?

Macarons actually taste best after "maturing" in the fridge for 24 hours. They can be frozen for up to 3 months.

44. Can I make cookie dough ahead of time?

Yes! Most doughs last 3 days in the fridge or 3 months in the freezer. Baking from frozen often yields better-shaped cookies.

45. How do I keep my bread from going stale?

Store it in a paper bag or bread box at room temperature. Never store bread in the fridge—it actually goes stale faster there!

46. Can I make buttercream the night before?

Yes. Store it in an airtight container. You may need to re-whip it briefly before use to get the air bubbles out.

47. How do I ship cookies so they don't break?

Pack them back-to-back in pairs, wrap in bubble wrap, and ensure there is zero "wiggle room" in the shipping box.

48. How do I store leftover fondant?

Wrap it tightly in plastic wrap (twice), put it in a Ziploc bag, and store it in a cool, dark cupboard. Do not refrigerate.

49. Why do my frozen cakes have "bubbles" under the fondant after thawing?

This is caused by "condensation blow-out." Always thaw cakes in their wrapping inside the fridge to let moisture move slowly.

50. Can I prepare cake batter the night before?

Generally, no. Once the leavening agent hits the liquid, it starts reacting. If it sits too long, your cake won't rise.

1. Ordering & Local Logistics (Tweed Heads Focus)

1. I’m in Queensland; do I follow NSW or QLD time for shop hours?

Since we are in Tweed Heads, we operate on NSW time. If you are coming from the Gold Coast during Daylight Savings, remember we are one hour ahead!

2. Can I browse the warehouse in person or is it click-and-collect only?

Our brand new store at 27 Minjungbal Drive is fully open for browsing! You can see the colors and tools in person before you buy.

3. Do you offer "Cake Emergencies" Express Shipping?

Yes! If you order before 12pm, we dispatch the same day. Selecting Express Post at checkout is the fastest way to get your supplies for a weekend bake.

4. Can I return a cake tin if it doesn't fit in my oven?

Unused tins in original packaging can generally be returned, but we always recommend measuring your oven interior before purchasing our larger professional slab tins.

5. How do I apply for a Wholesale or Trade account?

If you run a cake business, you can apply via our "Wholesale/Trade" link in the footer. We offer tiered pricing for high-volume decorators.

2. Edible Images & Custom Printing

6. What is the difference between an Icing Sheet and Wafer Paper?

Icing sheets are a thin layer of frosting on a plastic backing; they bond with the cake for a seamless look. Wafer paper is starch-based, stiffer, and great for "stand-up" decorations like butterfly wings.

7. Can I send a photo from my phone for a custom edible image?

Absolutely! Use our Custom Image uploader on the site to send your high-res JPEGs or PNGs directly to our printing team.

8. How do I stop my edible image from cracking?

Keep it in its sealed bag until the very moment you need it. If it feels dry, a very light "mist" of steam or a damp paper towel held near (not on) the sheet can help.

9. Can I use edible images on whipped cream?

We don't recommend it. The high moisture in whipped cream will dissolve the image quickly. It’s best used on buttercream, ganache, or fondant.

10. Do edible images contain common allergens?

Most of our icing sheets are gluten-free and dairy-free, but always check the specific product listing for "Premium Icing Sheets" to be sure.

3. The Science of Food Colouring

11. Why should I use Colour Mill instead of standard supermarket gels?

Colour Mill is oil-based. This means it loves fats (like buttercream and chocolate) and won't make your frosting seize or go "speckled" like water-based colors can.

12. Which coloring is best for achieving deep Red or Black?

We recommend Chefmaster Coal Black or Super Red. The secret is to make the frosting 24 hours in advance—the color deepens significantly as it "matures."

13. Can I use gel colors in chocolate?

No, water-based gels will cause chocolate to "seize" (turn into a clump). You must use oil-based colors or candy colors for chocolate work.

14. What is "Liquid Whitener" used for?

It removes the yellow tint from butter-heavy frostings, giving you a stark white base. It’s essential before adding pastel colors to get a "true" shade.

15. Will food coloring change the taste of my icing?

Professional brands like Americolor are highly concentrated, so you use very little, which prevents that "bitter" chemical aftertaste often found in cheaper dyes.

4. Fondant, Ganache & Modeling

16. Which fondant brand is best for the humid NSW/QLD climate?

Bakels Pettinice is a favorite among locals because it holds up well in humidity. Over The Top is also popular for its elasticity and "anti-elephant skin" properties.

17. How do I stop fondant from sticking to my bench?

Use a light dusting of Cornflour or use one of our non-stick Silicone Rolling Mats for a much easier cleanup.

18. What is Tylose Powder, and do I need it?

If you want to make figures or flowers that "set" hard, mix a teaspoon of Tylose into your fondant. It turns it into a quick-dry modeling paste.

19. How much fondant do I need to cover an 8-inch cake?

Generally, you’ll need about 750g to 1kg of fondant to ensure you have enough to roll out wide and trim the excess for a clean finish.

20. Is the "Ready-to-Use" Ganache we sell as good as homemade?

Yes! Our Cake Craft or Iconic ganaches are professional-grade. Just heat them gently in the microwave to reach the perfect "drip" or "spread" consistency.

5. Boards, Boxes & Structure

21. What’s the difference between a "Cardboard" and "Masonite" cake board?

Cardboard is for lighter cakes. Masonite (MDF) boards are $4mm$–$6mm$ thick and are essential for heavy mud cakes or tiered wedding cakes to prevent sagging.

22. How do I choose the right box height?

Measure your cake with the toppers on. We stock "Extra Tall" boxes (up to 12 or 14 inches) specifically for tiered cakes and large toppers.

23. Do I really need "Dowels" for a two-tier cake?

Yes! Without support, the top cake will slowly sink into the bottom one. Our plastic or wooden dowels act like pillars to hold the weight.

24. Should the cake board be the same size as the cake?

If you are putting the cake in a box, the board should usually be 2 inches larger than the cake so the frosting doesn't touch the sides of the box.

25. Are your cake tins seamless?

Most of our Mondo and Loyal tins are professional-grade seamless aluminum, which ensures straight sides and no "leakage" with thin batters.

6. Chocolate & Candy Melts

26. Do I need to "temper" the chocolate buttons you sell?

Our "Compound" chocolate (like Roberts or Vizyon) does not need tempering. Our "Couverture" chocolate (higher quality) does need tempering to stay shiny.

27. Why did my Candy Melts go thick and lumpy?

It was likely overheated. Heat in 20-second bursts and stir well. If it’s still thick, add a teaspoon of Paramount Crystals (vegetable fat) to thin it out.

28. How do I get a shiny finish on my chocolate molds?

Ensure your Silicone or Polycarbonate molds are bone-dry and polished with a soft cloth before pouring. Any moisture will cause "bloom" (dull spots).

29. Can I use luster dust on chocolate?

Yes! You can dry-brush it into the mold before pouring chocolate, or brush it onto the finished chocolate piece for a metallic sheen.

30. What is the best way to melt large quantities of chocolate?

A double boiler is safest, but if using a microwave, always use a plastic bowl, as glass holds too much heat and can burn the chocolate.

7. Sprinkles, Glitters & Edible Dusts

31. Is "Non-Toxic" glitter the same as "Edible" glitter?

No. Edible glitter is made of food ingredients. Non-Toxic means it won't hurt you if consumed in tiny amounts, but it's meant to be removed before eating (decorative use).

32. How do I make "Edible Paint" with luster dust?

Mix your luster dust with a few drops of Rose Spirit (95% alcohol). It evaporates quickly, leaving a dry, streak-free metallic finish.

33. Why do some sprinkles "bleed" into my buttercream?

High-moisture frostings (like cream cheese) can dissolve the sugar coating. Apply sprinkles just before serving or use a crusting buttercream.

34. Are your sprinkle mixes Gluten-Free?

Many of our Sprinks and Sprinkd ranges have GF options. Check the "Dietary" filter on our collection pages to see the full list.

35. Can I put luster dust in an airbrush?

Only if you use "Airbrush Luster." Regular dust is too coarse and will clog the fine needle of the airbrush.

8. Piping & Specialized Tools

36. Will these piping tips fit the couplers I already have?

Most of our tips are "Standard" size, but Large/XL tips (like the 1M or 2D) require a Large Coupler. We list the size in each product description.

37. What are "Tipless" piping bags?

These are thin, strong bags that can be used without a metal tip. You just snip the end to the size you need—perfect for royal icing and detail work.

38. How do I clean my metal piping tips?

Soak them in hot, soapy water and use a Tip Brush (which we sell!) to clear out any dried frosting from the small teeth.

39. Do I need a specific "Stencil Scraper"?

While a spatula works, a wide Acrylic Scraper or Palette Knife provides even pressure, ensuring your stencil design doesn't "smudge."

40. What is a "Cake Leveler" and do I need one?

It’s a wire tool that cuts the "dome" off your cake perfectly flat. It’s much more accurate than using a serrated knife by eye.

9. Ingredients & Mixes

41. How many cupcakes will one 1kg bag of cake mix make?

Generally, a 1kg bag of our Bakels or Cake Craft mix will make approximately 24 standard cupcakes or two 8-inch round cakes.

42. Do you sell "High-Ratio" shortening?

Yes, we stock Solite. It’s the secret to "pure white" buttercream that doesn't melt in the Australian heat.

43. Is your Egg White Powder the same as Meringue Powder?

Not quite. Egg White Powder is pure dried whites. Meringue Powder (like Wilton's) includes stabilizers and sugar, making it easier for Royal Icing.

44. What is "Glucose Syrup" used for?

It’s used to add elasticity to modeling chocolate, prevent sugar crystals in ganache, and keep your homemade fondant soft.

45. Do you stock Vegan-friendly decorations?

Yes! We have a dedicated Vegan filter for sprinkles, colors, and even some of our fondant brands.

10. General Troubleshooting

46. My edible pen is dry; can I fix it?

Dip the tip in a tiny bit of clear alcohol (Rose Spirit) or warm water for a few seconds to "re-activate" the ink.

47. How do I stop my cake box from "fogging up" in the fridge?

Place a piece of paper towel inside the box to absorb moisture, or keep the box slightly ajar until the cake has reached fridge temperature.

48. What is the "best" glue for sticking sugar flowers?

Edible Glue is best for light items. For heavy decorations, use a "dab" of melted chocolate or royal icing for a stronger bond.

49. Why is my "Drip" running all the way to the bottom?

Your cake wasn't cold enough, or your ganache was too hot. Ensure the cake has been in the fridge for at least an hour before dripping.

50. Can I buy a Gift Card for someone?

Yes! We offer Digital Gift Cards that are emailed instantly—perfect for the baker who wants to choose their own tools.
