Pineapple essence is used to add flavour to recipes, not as a substitute for fresh fruit in terms of texture or moisture. It is ideal for recipes where you want pineapple flavour without the acidity or liquid content of fresh or tinned pineapple. Fresh pineapple also contains an enzyme (bromelain) that can break down gelatine in mousses and jellies — the essence does not have this issue.

How much pineapple essence should I add?
