How do I get a clean release?
Dust the mould lightly with cornflour, press paste in with a small rolling pin, then trim excess with a blade tool rather than a sharp knife.
Can I use chocolate?
The mould is food-grade. For chocolate, temper well and chill before unmoulding. Flower paste still gives the finest feather detail.
