For the Chocolate Cream Cheese Frosting

- 113g (½ cup) unsalted butter, softened to room temperature
- 226g cream cheese (block-style, not spreadable), softened
- 1 teaspoon vanilla extract

- 50g (½ cup) natural cocoa powder, sifted

Method
Step 1, Bake the Mudcake
Preheat your oven to 160°C (140°C fan-forced). Grease and line two 7-inch or 8-inch round cake pans with baking paper.
If using melted chocolate, melt 150g of dark chocolate in a microwave in 20-second bursts, stirring between each, until smooth. Set aside to cool slightly.
In a large mixing bowl, combine the Chocolate Brownie Mudcake Mix, water, and vegetable oil. Add the cooled melted chocolate if using. Using a stand mixer or hand beaters:
- Mix on low speed for 1 minute, scraping down the bowl.
- Continue mixing on low speed for a further 2 minutes until smooth and combined.
Divide the batter evenly between the prepared tins. Bake for 35-40 minutes, or until a skewer inserted in the centre comes out with a few moist crumbs.
Transfer to a wire rack and cool completely before turning out.

Step 2, Make the Chocolate Cream Cheese Frosting
Ensure both the butter and cream cheese are fully softened at room temperature, cold cream cheese will cause lumps in the frosting.
In a large bowl, beat the softened butter and cream cheese together with an electric mixer on medium speed until smooth, creamy, and completely lump-free, about 3 minutes.
Add the vanilla extract and salt and mix to combine.
With the mixer on low, gradually add the sifted icing sugar until fully incorporated. Add the sifted cocoa powder and beat until the frosting is deeply chocolatey and smooth. Scrape down the sides and bottom of the bowl to ensure everything is fully combined.
