How to Make Cake Pops: Complete Beginner's Guide

TLDR: Crumb your cake, bind with just 2-3 Tbsp frosting, roll tight balls, chill, dip stick in melted candy melts, insert halfway, chill again, then dip whole pop at 35°C. Decorate with sprinkles while wet.

What Are Cake Pops?

Cake pops are rolled cake-and-frosting truffle balls on a stick, coated in chocolate or candy melts. Invented by Bakerella, they are perfect for parties, lunchboxes, and using leftover cake scraps. The secret is less frosting than you think.

Easy Cake Pop Dough Ratio

1. Bake any cake (350g baked cake) and cool completely.
2. Crumb finely - no big lumps.
3. Add 2-3 Tbsp buttercream or ganache. Mix with hands until it holds like playdough when squeezed. Too soft = falls off stick. You should NOT need half a cup of frosting.
4. Roll 20g balls (about 1 Tbsp) tight with palms. Place on parchment. Chill 2 hours or freeze 20 mins - firm but not frozen solid.

The Stick Trick That Stops Them Falling

Melt a little candy melts or chocolate. Dip 1cm of a cake pop stick into it, then push halfway into ball. This melted chocolate acts like glue. Chill again 10 mins so glue sets.

How to Dip Without Cracks

Melt candy melts to ~35°C - fluid but not hot. Pour into tall narrow cup. Dip straight down, lift, let excess drip, gently tap wrist not the stick. Spin slowly to smooth. If coating is thick, add a teaspoon of Paramount crystals or coconut oil.

Immediately add sprinkles before it sets. Poke into styrofoam block to dry.

Common Mistakes

Cracking: Ball too cold vs coating too hot. Let balls sit 5 mins out of fridge before dipping.
Sliding off stick: Too much frosting or stick not glued.
Lumpy coating: Coating too cool or cake crumbs in it. Use fresh cup, keep warm.
