How to Bake a Dolly Varden Cake

Baking a Dolly Varden cake is straightforward once you know the technique:

  1. Grease and line the tin well — use baking paper on the base and grease the sides thoroughly. The cone shape can make release tricky if the tin isn't prepared properly.
  2. Choose a dense batter — mudcake or a firm vanilla butter cake works best. Light sponges can collapse under their own weight in a deep cone shape.
