It requires tempering to offer up the snap and glossy finish you’d expect from a quality dark chocolate.

Size: 500g Bag.

Instructions:

  1. Tempering - place 2/3 of chocolate drops in a bowl over boiling water ad melt slowly to 45 degrees celcius stirring constantly
  2. Remove from heat and add remaining 1/3 of chocolate, stir until melted and cooled to 27 degreed celcius. Return to heat and stir until 30 degrees celcius is reached. Chocolate should be smooth, shiny and ready to use.
  3. * Ensure no steam or water comes into contact with the compound
